The amount of smoothies you sell should be proportionate to the amount of daily foot traffic you have. 10% of your workouts per day (WPD) should buy a smoothie on the low end. On the high end you should get 25%. This means at a club where you have 500 WPD on average you should be selling at least 50 smoothies per day, and on a good day you can sell up to 125. As you can see there is a huge difference between the two.
In order to get your smoothie sales to the maximum revenue number, you need to promote your smoothie bar both internally and externally. One of the easiest internal promotions is sampling. Why you should sample: When you sample smoothies to your current clientele you have the opportunity to turn someone on to something new. Clients may be unaware that you even sell smoothies. Gives you the opportunity to educate clients and create client/employee interaction. Clients may have forgotten how good smoothies taste and haven't purchased one in a while.
Now that you are convinced that sampling smoothies is a good idea, what's the best way to go about it? Some of the key points are: You want to time them with peak hours so you get the high traffic. You also want to remember smoothies melt, so as soon as you make your samples get them into the clients hand. You don't want a sample sitting on the counter for an hour before a patron tries it.  Always make the most popular flavors. Put samples in a small cup (less than 4 oz). When you blend a 24 oz smoothie, try to get at least 12 samples.
